Colombia Tolima comes to us from the Cooperativa Multiactiva de Asociaciones Agropecuarias del Tolima (Multicoop) which manages 379 small-farm producers in the municipalities of Planadas, Rio Blanco & Chaparral. Each producer has their own micro-mill where they carefully harvest cherries, depulp, ferment, wash, & then gently dry the parchment on raised beds. Their comprehensive farm management & post-harvest practices result in a clean & consistent green blend—there are just enough distinctions from farm-to-farm to create a rich complexity of flavors.
Export company Mastercol affords important logistical support for warehousing & distribution which leads to more income for the farmers to reinvest in their livelihoods.
I roasted this coffee to a light roast to reveal a complex, juicy & very refreshing coffee! The first sip is a hint of bright, exotic fruit, followed by a complex & rich body with soft notes of dried-fruit, & a refreshingly delicate lime-zest finish.
