Cerro Las Ranas is Spanish for Hill of Frogs. Located in Apaneca & within the department of Ahuachapán, this coffee is named after the farm’s lagoon that is populated by thousands of frogs. The coffee is produced by the family-owned operation called JASAL. Jose Antonio Salaverria & his sons pay close attention to every detail, from year-round farm management to quality control in the cupping lab, & everything in between. In the pulped natural process, also called honey processing, JASAL pulps thoroughly ripened cherries & then dries the still-covered-in-mucilage coffee beans on clay patios.
Roasted light, this is a beautifully bright, sweet, & balanced cup of coffee. Expect subtle notes of sugar cane up front, followed by a splash of sweet lemon, & a hint of fresh berry notes on the finish. Brew using your favorite pour over method.
