Double Washed Coffee – Perfected in Kenya
Kenya is known for some of the most meticulous at-scale processing found anywhere in the world. Bright white parchment prepared at high-elevations, then impeccably sorted by density & bulk, is typical.
Generous water sources in the central growing regions have traditionally allowed factories to wash, soak, & rewash their coffees with fresh, cold river water. The rewash is known as double washing. Double washing is a special way to process coffee that makes it taste even better. In this step the coffee beans soak for a longer time underwater to ferment and then they need to be washed again. As a result farmers can evaluate their coffee three times during the process to make sure it is the best quality. Washing coffee beans twice can lower their acidity level make the texture more interesting and improve the overall flavor of the coffee.
